  • 2 pounds boneless chicken thighs (or breasts) Thighs are recommended for moisture and flavor.
  • 1 tablespoon turmeric powder
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon cumin powder Optional for additional flavor.
  • 1 tablespoon salt
  • 3 tablespoons olive oil (or coconut oil)
  • 3 cloves garlic, minced
  • 1 medium onion, sliced Adds depth to the dish.
  • 1 juiced lemon For a bright finish.
  • Fresh cilantro for garnish Optional.

Method
 

Preparation
  1. If using chicken thighs, cut them into sizable chunks; if using breasts, slice them into strips.
  2. In a large mixing bowl, combine turmeric, black pepper, cumin (if using), and salt.
  3. Add the chicken to the spice blend and toss to coat evenly. Allow marinating for at least 15 minutes.
Cooking
  1. Warm olive oil in a large skillet over medium heat.
  2. Add sliced onions and sauté until translucent and slightly caramelized, about 4-5 minutes.
  3. Add the marinated chicken to the skillet and cook for about 6-8 minutes until golden on one side.
  4. Turn the chicken to color all sides evenly and cook for an additional 4-5 minutes.
  5. Check that the chicken is cooked through (internal temperature should reach 165°F).
  6. Drizzle fresh lemon juice over the top and garnish with chopped cilantro.

Notes
