Broth and Vegetables
  • 4 cups chicken broth (or vegetable broth for a vegan option) Ensure broth is gluten-free if needed.
  • 2 cups cooked chicken, shredded (or chickpeas for a vegan twist) Use rotisserie chicken for a time-saving option.
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 cup spinach (or kale)
  • Salt and pepper, to taste
For Serving
  • Lemon wedges For serving.

Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the chopped onion and sauté for about 5 minutes until soft and translucent.
  3. Stir in the minced garlic and grated ginger, cooking for about 1 minute until fragrant.
  4. Add the ground turmeric and stir for another minute, allowing the color to bloom.
  5. Pour in the chicken (or vegetable) broth and bring to a gentle boil.
  6. Add the sliced carrots and chopped celery, then let simmer for about 15 minutes until tender.
  7. Stir in the cooked chicken or chickpeas and cook on low for another 5 minutes.
  8. Add the spinach in the last minute until wilted and the broth is hot.
