Ingredients
  

Cookie Base
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Filling
  • 1 cup caramel candies, unwrapped
  • 1/4 cup heavy cream
  • 1 cup chocolate chips
  • to taste sea salt for sprinkling on top Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add in the eggs and vanilla extract, mixing well until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually blend the dry mixture into the wet mixture until dough comes together.
  6. Scoop dough into the muffin tin, filling each cup halfway and creating a well in the center.
Filling and Baking
  1. Melt the caramel candies with heavy cream in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  2. Pour the caramel into each well of the cookie cups.
  3. Bake for about 12-15 minutes or until cookies are golden.
  4. Let cool slightly, then drizzle melted chocolate over the tops.

Notes
