  • 3 cups cooked pasta (elbow, penne, or shells)
  • 2 cups shredded rotisserie chicken or any cooked chicken
  • 1 can (10.5 oz) cream of mushroom soup can substitute with cream of chicken or a vegan alternative
  • 1 cup frozen peas can use any frozen veggies you have
  • 1 cup shredded cheddar cheese feel free to swap for mozzarella or a dairy-free cheese
  • 1/2 cup milk this can be plant-based too
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs Panko works best for extra crunch
  • 2 tablespoons melted butter or olive oil optional, for the breadcrumb topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine your cooked pasta, shredded chicken, cream of mushroom soup, frozen peas, and milk.
  3. Sprinkle in the garlic powder, onion powder, and season with salt and pepper. Mix until everything is well combined.
  4. Transfer the mixture into a greased casserole dish, spreading it evenly.
  5. Sprinkle the shredded cheddar cheese over the top.
  6. In a separate bowl, mix your breadcrumbs with melted butter or olive oil until adequately coated, then layer this on top of the cheese.
Baking
  1. Pop your casserole into the oven for about 25-30 minutes.
  2. It should be bubbling around the edges and beautifully golden on top; keep an eye on it during the last few minutes.
