Ingredients
  

Donut Batter
  • 1 ¼ cups all-purpose flour
  • ½ cup granulated sugar (or coconut sugar) Use coconut sugar for a lower glycemic index.
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsweetened almond milk Any non-dairy milk can be used.
  • 1 tablespoon apple cider vinegar
  • ¼ cup coconut oil, melted Can substitute with vegetable oil.
  • 1 teaspoon vanilla extract
Optional Toppings
  • Powdered sugar, cinnamon sugar, or a glaze made from powdered sugar and almond milk For drizzling.

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C).
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the almond milk with the apple cider vinegar and let it sit for about 5 minutes.
  4. Stir in the melted coconut oil and vanilla extract into the wet mix.
  5. Gently pour the wet ingredients into the dry mix while folding until just combined.
  6. Spoon the batter into a greased donut pan, filling each cavity about three-quarters full.
Baking
  1. Bake for 12-15 minutes until golden, with a toothpick coming out clean.
  2. Let them cool in the pan for a few minutes before transferring to a wire rack.
