  • 1 tablespoon olive oil (or vegetable broth for a low-fat option)
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
Spices and Lentils
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika (optional) For a smoky flavor
  • 1 cup dried green or brown lentils (rinsed and drained)
Liquids
  • 6 cups vegetable broth (or water) Broth adds more flavor
  • 1 can (14.5 ounces) diced tomatoes (with juices)
Greens and Seasoning
  • 2 cups fresh spinach (or kale) Kale for a heartier green
  • to taste Salt and pepper
  • to taste Fresh parsley or cilantro for garnish (optional)

Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the diced carrots and celery, cooking for another 3-4 minutes until softened.
  4. Mix in the garlic, cumin, and smoked paprika, cooking for another minute until fragrant.
Cooking
  1. Add the lentils to the pot and stir to combine.
  2. Pour in the vegetable broth and diced tomatoes, bringing to a gentle boil.
  3. Reduce the heat, cover the pot, and let it simmer for 20-25 minutes, until lentils are tender.
  4. Stir in the spinach (or kale) and let it wilt for a few minutes before seasoning with salt and pepper.

Notes
