Salad Ingredients
  • 1 ripe avocado, diced Use a ripe Hass avocado for best texture.
  • 1 cup cherry tomatoes, halved You can substitute with bell peppers.
  • 1 cup cucumber, diced Diced for a refreshing crunch.
  • 1 cup radishes, thinly sliced Substitute with bell peppers or sugar snap peas.
  • 1 cup mixed salad greens (arugula, spinach, or your choice) Use a variety of greens for color.
  • 1/4 cup red onion, thinly sliced Optional ingredient.
  • 1/4 cup fresh mint, chopped Adjust quantity to taste.
  • 1/4 cup fresh basil, chopped Adjust quantity to taste.
Dressing Ingredients
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar (or lemon juice) Can substitute for the dressing.
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Method
 

Preparation
  1. Gather all your ingredients, selecting colorful varieties for visual appeal.
  2. Slice the radishes thinly, dice the cucumber, and halve the cherry tomatoes.
  3. In a bowl, add the mixed greens as the base.
  4. Gently toss in the cucumber, radishes, cherry tomatoes, and red onion if using.
  5. Carefully dice the avocado and sprinkle it over the salad.
  6. Toss the salad gently to avoid mashing the avocado.
Dressing
  1. In a separate bowl, whisk together the olive oil, red wine vinegar (or lemon juice), and Dijon mustard.
  2. Season with salt and pepper to taste.
  3. Drizzle the dressing over the salad and toss gently until everything is well coated.
