Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and white sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs, one at a time, ensuring to fully incorporate each before adding the next.
  4. Stir in the vanilla extract.
  5. In a separate bowl, combine the flour, baking soda, salt, and Vietnamese cinnamon.
  6. Slowly mix the dry ingredients into the wet mixture, being careful not to overmix.
  7. Gently fold in the chocolate chips and nuts if using.
Baking
  1. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto a lined baking sheet, leaving space between each cookie.
  2. Bake for 10-12 minutes, until the edges are golden brown but the centers remain soft.
  3. Allow cookies to sit on the baking sheet for a couple of minutes, then transfer to a wire rack to cool completely.
