Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, melt the butter and stir in the granulated sugar until well-blended.
- Beat in the egg until the mixture is smooth.
- Gently whisk in the buttermilk and vanilla extract.
- In a separate bowl, combine the flour, baking powder, baking soda, and salt.
- Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Fold in the chopped rhubarb carefully.
- Pour the thick batter into a greased 9x13 inch baking pan and smooth the top.
Baking
- Bake for about 30-35 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
Butter Sauce Preparation
- In a small saucepan over medium heat, melt the butter, brown sugar, and heavy cream together, stirring gently until the sugar is fully dissolved.
- Bring to a slow boil and then let it simmer for about 2-3 minutes until it thickens slightly.
Serving
- Once the cake is out of the oven and has cooled for a few minutes, drizzle the butter sauce generously over the top.
- Serve warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream.
