  • 2 cups fresh spinach (or kale)
  • 1 medium onion, chopped

  • 1 teaspoon dried oregano (or 1 tablespoon fresh)
  • 1 teaspoon crushed red pepper flakes (optional, for a kick)
  • 1 cup low-sodium chicken or vegetable broth
  • ½ cup dry white wine (optional)
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Heat a large skillet over medium heat and drizzle in the olive oil.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Crumble the sausage into the skillet and stir frequently until browned for 6-8 minutes.
  5. Pour in the white wine and broth, bringing to a gentle simmer.
  6. Stir in the white beans and cook together for another 5-10 minutes.
  7. Add fresh spinach, folding it into the mixture until wilted.
  8. Season with salt and pepper to taste before serving.
