  • 1 cup heavy cream Whipped to soft peaks
  • 8 oz mascarpone cheese Can be substituted with a vegan alternative
  • 1 cup white chocolate chips, melted
For Assembly
  • 1/2 cup raspberry purée (fresh or store-bought)
  • 1/2 cup strong brewed coffee, cooled For dipping ladyfingers
  • 12 pieces ladyfinger cookies Quickly dip in coffee

Method
 

Preparation
  1. Whip the heavy cream in a large bowl until you have soft peaks.
  2. Fold in the mascarpone and melted white chocolate until combined.
  3. Prepare the coffee in a shallow dish and let it cool completely.
Assembly
  1. Dip the ladyfingers briefly in the cooled coffee, ensuring they are not soaked.
  2. In a serving dish, spread a layer of the white chocolate cream mixture.
  3. Layer dipped ladyfingers on top, followed by a drizzle of raspberry purée.
  4. Repeat these layers until ingredients are used up, finishing with a layer of cream.
  5. Refrigerate for at least 4 hours or overnight.
Serving
  1. Once ready, garnish with fresh raspberries before serving.
