Method
Preparation of Tart Crust
- In a large bowl, combine the flour, powdered sugar, and salt.
- Cut in the softened butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
- Gently mix in the egg yolk and vanilla extract until a dough forms.
- Press the dough evenly into a 9-inch tart pan and prick the bottom with a fork.
- Refrigerate for about 30 minutes.
Baking the Crust
- Preheat your oven to 350°F (175°C).
- Bake the crust for 20-25 minutes or until it’s lightly golden.
Preparing Lemon Curd
- In a medium saucepan, whisk together the eggs and sugar until smooth.
- Mix in the lemon juice and zest.
- Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 8-10 minutes).
- Remove from heat and stir in the butter until melted and well combined.
Assembling the Tart
- Pour the lemon curd into the cooled tart shell, smoothing the top.
- Allow the tart to cool at room temperature for about 30 minutes, then chill in the refrigerator for at least an hour.
- Before serving, top with fresh blueberries.
