  • 1 cup grated zucchini (about one medium zucchini)
  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • ½ cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup chocolate chips (semisweet or dark)
  • ½ cup chopped nuts (walnuts or pecans, optional)

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine grated zucchini, softened butter, brown sugar, granulated sugar, egg, and vanilla extract. Mix until well blended and creamy.
  3. In another bowl, whisk together flour, baking soda, baking powder, and salt.
  4. Gradually add the dry mixture to the wet ingredients, stirring until just combined. The dough should feel thick but pliable.
  5. Fold in chocolate chips and nuts if using.
Baking
  1. Using a tablespoon, scoop the cookie dough onto the prepared baking sheet, spacing them a few inches apart.
  2. Bake for about 10-12 minutes, or until edges are lightly golden.
  3. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
