Ingredients
  

For the Filling
  • 2 cups cottage cheese (preferably full fat) Choose full-fat for creamier texture.
  • 1/2 cup Greek yogurt
  • 1/3 cup honey or maple syrup For a sweeter flavor.
  • 3 large eggs Can substitute with flax eggs for a plant-based option.
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 teaspoon lemon juice Adds brightness to the flavor.
For the Crust
  • 1 cup almond flour
  • 3 tablespoons melted coconut oil
For Garnish (optional)
  • 1 cup Fresh fruit or berry toppings Strawberries, blueberries, or whipped cream work well.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, blend together the cottage cheese, Greek yogurt, honey or maple syrup, eggs, vanilla extract, salt, and lemon juice until smooth using an immersion blender or food processor.
  3. In another bowl, combine the almond flour and melted coconut oil, mixing until it resembles a crumbly texture.
  4. Press the crust mixture into the bottom of a greased springform pan.
Baking
  1. Pour the creamy filling into the prepared crust and smooth the top.
  2. Bake in the preheated oven for about 30-35 minutes, until the edges are set and the center has a slight jiggle.
  3. Remove from the oven and let it cool at room temperature for a bit before refrigerating for at least three hours or preferably overnight to set.

Notes
