  • 1 cup brown sugar (or coconut sugar for a healthier twist)
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 pinch salt

Method
 

Preparation
  1. Begin by mashing the ripe bananas in a bowl until they’re mostly smooth. A few lumps are perfectly fine; they add character to your syrup.
  2. In a medium saucepan, combine the mashed bananas, brown sugar, water, and a pinch of salt.
  3. Over medium heat, stir everything together until the sugar has dissolved and the mixture begins to simmer. Watch for gentle bubbles on the surface.
Cooking
  1. After about 5–7 minutes of simmering, add the vanilla extract and cinnamon (if using). Continue to simmer for an additional 10-15 minutes.
  2. Stir occasionally until the syrup thickens to your desired consistency. Remember, it will thicken more as it cools.
  3. Once you’re happy with the texture, remove it from the heat and let it cool slightly.
  4. You can strain it through a fine-mesh sieve for a smoother syrup or pour it into a clean jar and let it cool entirely before sealing.

Notes
