Preparation
- Heat the oil in a medium pot over medium-high heat.
- Add the beef in a single layer and let it sear for about 1–2 minutes without stirring until browned.
- Push the beef to the side, lower the heat slightly, and add onion, garlic, and ginger. Sauté until translucent, about 2–3 minutes.
Cooking
- Stir in the gochujang and soy sauce, cooking for 30–45 seconds.
- Pour in the broth, bring to a simmer, and scrape the bottom for browned bits.
- Taste and adjust saltiness with soy sauce or a pinch of sugar.
- Add ramen noodles and cook according to package directions (2–3 minutes), adding spinach or bok choy in the last minute.
- Turn off the heat, stir in scallions and sesame oil, then ladle into bowls.
- Top with a halved soft-boiled egg, extra scallions, and sesame seeds.
