Ingredients
  

For the cheesecake cups
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1/2 cup creamy peanut butter (or almond butter for a twist)
  • 1/3 cup honey or maple syrup (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional, for firmer texture) Use if a firmer texture is desired.
For the crust
  • 1 cup crushed graham crackers (or gluten-free alternative)
  • 1/4 cup melted butter (or coconut oil)
  • 2 tablespoons brown sugar Omit for a lower-sugar version.
Optional toppings
  • Chocolate shavings
  • Chopped peanuts
  • Whipped cream

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the crushed graham crackers, melted butter, and brown sugar. Mix until it resembles wet sand.
  3. Press the crust mixture into the bottom of your cup or muffin tin.
Filling
  1. In a blender or food processor, blend the cottage cheese until smooth.
  2. Add the creamy peanut butter, honey or maple syrup, vanilla extract, and lemon juice. Blend until combined.
  3. If needed for a firmer texture, add a tablespoon of cornstarch and blend again.
Baking
  1. Pour the filling over the crust in each cup, filling about 3/4 full.
  2. Bake for 20-25 minutes until just set; they may jiggle slightly.
  3. Let cool at room temperature, then refrigerate for at least an hour before serving.
